Ingredients

    2 medium carrots
    2 medium leeks
    1 cup uncooked rice
    12 oz boneless skinless chicken
    1 tsp thyme
    1/2 tsp rosemary
    3 14oz cans chicken broth
    1 10.75oz can golden mushroom or cream of mushroom soup
    1/2 c chopped onion
    1 clove garlic

Directions

In a 3.5-6 quart slow cooker place carrots, leeks, rice, onion and garlic. Add chicken, thyme, rosemary, and a dash of pepper. Pour chicken broth and mushroom soup over mixture in cooker.
Cover and cook on low-heat setting for 7-8 hours or on high-heat setting for 3.5-4 hours.

    *For both the soups (Chicken broth and Cream of Mushroom) make sure you buy low- or no- sodium versions. It cuts down on the sodium without cutting down on the taste.

    Don't add the rice right away, it gets mushy, tasteless, and nasty looking. The safest way is to make rice separately. If making ahead of time and rice is cold, add for the last 30min, possibly less. If the rice is still warm, for the last 5min. - 6/21/16

    Very Good
    I cut this down for 2 people, added 1/2 bell pepper & sage leaves, forgot the onion. still pretty good comfort food on a cold day, served with green salad & fresh fruit. - 2/10/10
