Introduction

Chocolate Chip cookies made using Stevia instead of refined white sugar and (believe it or not) refried beans. Protein plus chocolate... how can you go wrong!

Ingredients

    1 1/2 tbsp Stevia Powder (extract)
    2 1/2 cups Rolled Oats
    1 tsp Baking Powder, 1 tsp
    1 tsp Baking Soda, 1 tsp
    1/2 cup Refried Beans w/o the Refry
    1/2 cup Butter (softened)
    1/2 cup Brown Sugar, packed
    1/2 cup Extra Light Olive Oil
    1 tsp Vanilla extract
    1/2 cup Nestle chocolate mini morsels

Directions

Preheat oven to 375 degrees

Put the oats in a blender or food processor and mix until it has the consistency of flour
In medium size bowl, combine oats, flour, baking soda & baking powder. Set aside
In a large bowl, using a hand held blender, mix the butter and refried beans first. When smooth, add the stevia and brown sugar. Beat in the oil and vanilla extract.
Hand stir in the flour mixture next and then the chocolate morsels.
Measure out 1 teaspoon of dough, space 1 1/2 inches apart on an ungreased cookie sheet.
Bake for 8-10 minutes.
Makes approximately 65 servings
