Introduction

My kids love this but you may want to use all mild Rotel if you are feeding it to children. It tends to get spicy but has more flavor with the original. You can add salt and pepper to taste. I try to stay as low sodium as I can so it may need some at the end. Also, you may want to cook the green beans a little before throwing in the crockpot. Ingredients

    Chicken Breast, no skin, 40 ounces
    ROTEL Mild Diced Tomatoes & Green Chilies, 1.25 cups
    ROTEL Original Diced Tomatoes & Green Chilies, 2.5 cups
    Swanson Chicken Broth 100% Fat Fee No MSG 33% Less Sodium, 4 cups
    Zucchini, 2.5 cups, sliced
    Summer squash, 2 cup slices
    Green Beans (snap), 3 cups
    Onions, raw, .25 cup, chopped
    Celery, cooked, 2 stalks
    Water, tap, 2 cups

Directions

Rinse chicken breast and place at bottom of slow cooker. Chop all veggies and add to slow cooker. Add Chicken broth, water and ROTEL then cover and cook all day. I usually do about 5 hours unless chicken breast are frozen then I do about 8 hours.
Makes 12 serverings. 1 serving = 2 cups
