Number of Servings: 6

Ingredients

    6 Boneless, skinless chicken breast cup up into bite size pieces
    3.5 cups Chicken broth
    1 cup Northern beans
    1-4 oz can Green Chilies, diced
    1/2 Onion, diced (Medium)
    Flour - Coating the chicken
    1 tsp Garlic powder
    Dash of Sea salt
    Dash of Black pepper
    1/2 tsp. Red pepper flakes
    1/2 tsp. Ground Cumin
    Cooking spray
    Cilantro to garnish (optional)

Prim Decorations, Update On CT Scan
Top of the morning to you all! Many of you have asked me about the CT Scan results, I received the results yesterday and all was normal. I will am going to see the Gastroenterologist on February 18th. Thank you greatly for all your prayers.

Now for the fun stuff.....
The couch end table was looking a little bare, just one candle all by it's wee little self. Taking a little from here and there I came up with a cute little primitive vignette. The little star ornie in the cheese box says "When they saw the star, they rejoiced with exceeding joy." Matthew 2:10. I made them by hand and gave them for gifts at Christmas this year.....they smell so yummy. The tag is pinned to the star with a rusty safety pin and bell.

Paper Crafting Thursday

First off let me say thank you for all your prayers, I do not have the results to my CT scan as of yet but I have been feeling really good over the past few days. Praise the Lord for that!

I am still working on the scarf that I was knitting, to be honest I have not picked up in about a week, the not feeling well thing, but I think tonight I will be back at it again! Yahoo!
However, there is plenty of card making going on here, which I will post more pics of tomorrow but for now here is one of them.
Nothing like birds, eggs, nests, feathers and ephemera on a card, couldn't get better then that!!
Getting Healthy!! Please hold me to it! Mostly due to the health problems that I have experienced over the last few months I am getting healthy! Let me tell you what a rude awakening it was too! My name is Tami and I am over weight, I am not comfortable telling my weight, but there will be a day that I will tell all how much I did weigh, after a great loss. I have struggled with my weight for years, and I so need to say that this time it seems so different. It is a challenge but in the end it will all be well worth it. I will post updates time to time on my progress. Here are a couple things going on to get there.....
Exercise - I started working out to Leslie Sansone yesterday and let me tell you it is working, the muscles were a little achy this morning but that is not going to stop me from working out again today!

Eating Healthy - I made White Bean and Chicken Chili last night, I had a couple recipes but did not like either one, so I came up with something that turned out to have wonderful flavor and best part of it all hubby loved it. Here is the "recipe," I do not measure, yes, I am a "dumper" and proud of it! It's all about taste when you are a dumper.

White Bean and Chicken Chili


INGREDIENTS~

6 -7 Boneless, skinless chicken breast cup up into bite size pieces
1-28 oz Chicken stock (Swanson)
2 cans Northern beans
1-4 oz can Green Chilies, diced
1/2 Onion, diced
Flour
Garlic powder
Sea salt
Black pepper
Red pepper flakes
Ground Cumin
Olive Oil
Sherry Cooking Wine
Cilantro to garnish (optional)


DIRECTIONS~

1. In a bowl season chicken with black pepper, sea salt and garlic, add enough flour just to coat the chicken.

2. In a dutch oven or cast iron pot over medium heat, add about 1/4 cup of olive oil, once hot add chicken browning each side. Remove chicken from pan and set aside.

3. Add a little more olive oil and onion to caramelize.

4. Add chicken stock, beans, chilies, chicken all to pot.

5. Season with red pepper flakes, black pepper, cumin and garlic powder. (I season to taste)

6. Allow to simmer on low-medium heat for about 45 minutes. The flour from the chicken should thicken the stock.

7. To serve sprinkle chopped cilantro on top. (optional)
