I just invented this recipe the other day when we had some extra squash to use - wow did they sell fast! They have a dense texture and strong squashy flavor, perfect with the oats and chocolate! Number of Servings: 12

Ingredients

    3/4 c. White Wheat Flour
    3/4 c. All-purpose Flour
    1 c. Oats
    2 tsp. Baking Powder
    1 tsp. Baking Soda
    1/2 tsp. Salt
    1 tsp. Cinnamon
    1 tsp. Clove Powder
    1/2 tsp. Nutmeg

    1 c. Pureed Butternut Squash
    1/2 c. Chocolate Chips (Dark choc for vegans!)
    1/3 c. Sugar
    1/2 c. Applesauce
    1/3 c. Oil
    1/2 tsp Vanilla Extract
    2 tbsp Soy yogurt

Directions

Same routine - mix wet and dry ingredients separately, combine both and mix just until combined. Fold in chocolate chips. Grease muffin pan and fill cups 3/4 full.

Bake at 375 degrees fahrenheit for 20 minutes.

Yeild: Approx. 12 small muffins

    Very Good
    These are quite tasty. I did not have wheat flour on hand so I used all-purpose flour in its place. I added a few tablespoons of ground flax seed for additional texture. I also added a little less cinnamon and about .5 tbsp ground ginger. This recipe is definitely a keeper. - 10/16/10
