Introduction

Number of Servings: 8

Ingredients

    2 cups dry Great Northern or other dry white beans
    1 qt water
    1 qt 99% fat-free, low sodium chicken broth
    (Try with Low sodium Vegetable broth to make vegetarian instead!)
    3 Tbsp. olive oil
    2 garlic cloves
    4 Tbps chopped parsley
    1 tsp salt
    1/2 tsp white or black pepper

Directions

Place Beans in large Soup pot. Cover with Water and bring to boil. Cook 2 minutes. Remove from heat. Cover pot and allow to stand for 1 hour. Drain, discarding water.
Combine beans, water, and chicken broth in slow cooker.
Saute garlic and parsley in olive oil in skillet. Stir in slow cooker.
Add salt and pepper (I used white pepper.)
Cover and cook on Low for 8-10 hours or until beans are tender.

    WOW was this good!!! I used dried parsley (1 tbsp) and beans I had on hand (LIMA). This is a keeper and so easy! Thank You!!! Before I served I sprinkled each bowl w ~1 tbsp shredded parmesan. My DH had a 2nd helpings. - 12/28/08

    To make it truly vegetarian, just substitute vegetable broth. Easy! - 12/14/08
