Introduction

From cooks.com adapted with olive oil and country crock instead of butter. Could use less of each or just one. I cook in cast iron and tend to need a little more. Juice of one lemon for less tangy flavor, two as written here. From cooks.com adapted with olive oil and country crock instead of butter. Could use less of each or just one. Really nice --- I had made this before but with loads of butter. Served with fresh green beans. I did add a little water to the pan to deglaze the chicken. - 4/1/09

I fixed this tonight, and it was very good. I used less lemon, since my son doesn't like heavy lemon, but it was very good. I also liked the light flour breading - helped lock in the juices. I used lemon pepper on my own, to give it more lemon taste. Will definitely cook again! - 2/3/09
