Ingredients

    1 Cup yellow cornmeal
    1 Cup stone ground cornmeal
    1 (9oz.) package yellow cake mix
    2 t. baking powder
    1 t. salt
    1/8 t. cayenne pepper
    1/2 C milk
    1/2 C buttermilk
    1/4 C vegetable oil
    2 eggs, beaten
    2 T light brown sugar
    2 T honey
    1 T miracle whip light

Directions

Combine cornmeals, cake mix, baking powder, salt, and cayenne in a bowl, set aside. Combine milk, buttermilk, oil, eggs, brown sugar and honey in a bowl and mix well. Add to the cornmeal mixture and mix gently - there should be no lumps, but do not overmix. Fold in the miracle whip.

Let rest, covered, in the refrigerator for 30 minutes or up to overnight.

Preheat the oven to 400. Spoon the cold batter into a greased muffin tin. Bake for 25-30 minutes or until a cake tester comes out clean and the top is golden brown.

    These were amazing! I used egg subbstitute instead of real egg and all yellow cornmeal instead of part stone. And also 8oz creamed corn instead of MiracleWhip. - 2/28/11

    This was a total waste of my time and money. This surely does not taste like Famous Dave muffins...NOT AT ALL. Like someone else said it came out super dry and crumbly and hard. Looked nothing like the actual muffins and tasted awful. All went in the trash. Don't waste your money and time. - 11/18/11

    Very Good
    The only reason I gave it 4 instead of 5 is because they're dry and crumbly, not moist. It was WAY better than the other attempt we made though. I've seen a glaze recipe come with a different one so I may try that glaze with this one if I can find it. - 8/7/11
