Ingredients

    1/2 teaspoon extra virgin olive oil
    1/2 teaspoon finely chopped shallots
    1/3 cup fresh tomatoes
    1 cup sweet corn
    1/2 teaspoon finely chopped seeded jalepeno pepper
    pinch cumin
    1/4 teaspoon splenda
    4 teaspoons balsamic vinegar
    salt & pepper

Directions

Cook shallots over medium heat until soft with olive oil. Add tomatoes, sweet corn and jalepeno pepper, cook for 1 minute. Add cumin and splenda, cook for 1 minute. Add vinegar, cook until liquid reduces slightly. Add salt & pepper.

    Very colorful and tastey. I did substitute frozen corn for fresh and add more jalepeno. - 5/5/07
