Introduction

I made this for a Super Bowl Party and it was a hit. I did lower the fat content and left out the salt and it still tasted good. This is from a "Canadian Living Magazine Test Kitchen recipe. Ingredients

    2 tbsp olive oil
    3 onions thinly sliced
    1 Tbsp balsamic or wine vinegar
    1 tbsp honey
    1 tsp dried thyme or few fresh sprigs
    5 cups day-old baguette
    1 cup diced brie cheese
    3 whole eggs
    3 egg whites
    1 cup fat free evaporated milk
    1 cup 1% milk
    1/2 tsp nutmeg, salt & pepper

Directions

Heat large skillet, add oil and fry onions stirring often until deep golden brown. If using the fresh thyme, add sprigs to onions while carmelizing, then remove stems. Stir in vinegar, honey, & thyme (if using dry).
In large bowl toss together bread, cheese and onion mixture; spoon into shallow, greased 8-cup gratin dish.
In bowl whisk eggs, milk (both), nutmeg, salt and pepper; pour over bread and press. Let stand until liquid is absorbed 20 min.(Make-ahead: cover and refrigerate for up to 24 hrs).
Bake in 350F oven until crisp, browned, and knife inserted in centre comes out clean, about 45 min.
