Ingredients

Skinless, Boneless Chicken Thigh, 24 oz (6 thighs)
1/2 tsp Spike Original Gourmet Natural Seasoning
1/2 tsp Black Pepper
1/2 tsp lemon pepper
1/2 tsp Paprika
1 can Campbell's Cream of Mushroom Soup (condensed)
1 cup Vitasoy All Natural Lite Plus Soy Milk
6 cups Chicken Broth, fat free, low sodium)
1/2 Med Onions, raw, finely chopped
6 cloves Garlic, finely chopped
Directions
Preheat oven to 350 degrees.
Mix soy milk and cream of mushroom soup together with spices, finely chopped garlic and onion in oven proof covered casserole. Cut chicken into small pieces. Put in casserole dish and mix. Put in oven and cook for 45 - 60 minutes.
Put chicken broth and brown rice in large saucepan and bring to boil. Lower heat to simmer. Put lid on pot and cook until liquid has been absorbed.
6 serving. I cup of brown rice to chicken mixture per serving
