Introduction

Inspired by New Orleans, gumbo is loved all over the USA! With okra, tomatoes, and onions, this animal-product-free version will please meat-eaters and vegans alike! Ingredients

    1/2 cup chopped onions

    1 can of sweet yellow corn

    20 oz. frozen sliced okra

    About two cans of diced tomatoes-- this is variable based on your love for tomatoes

    1/2 of a medium sized zucchini, sliced and then quartered

    1/2 of a bag of vegetarian burger crumbles, (like Morningstar Farms )

    3 tablespoons (or to taste) of your favorite creole seasoning (I like Tony Chachere's creole seasoning)

    (If you do not have creole seasoning, use about 1 tablespoon salt, 2 teaspoons pepper, and 2 tablespoons garlic powder as a substitute)

    2 cups cooked long grain long white rice or your favorite rice

Directions

1.) saute onions in a large pot until slightly tender

2.) add all other ingredients, except the rice, and allow to simmer lightly for about 20 minutes

3.) serve over rice, or mix rice into cooked gumbo

    I have recently switched to vegetarianism, and thought this would be great for out 1st meal as veg. I had to add 3 cups of H20, dash of hot sauce and some carrots. We enjoyed it, but found discrepancies b/w this and the one on the recipes page. Good idea! Thank you! - 3/26/07
