Introduction

Number of Servings: 8

Ingredients

    32 oz container Swanson fat free beef broth
    1 cup salsa
    1/2 tsp cumin
    1 medium zucchini julienned.
    7 oz deli roast beef, cut into strips
    1 can kidney beans
    10 oz frozen corn
    1/4 large red pepper diced
    1/4 large green pepper diced

Directions

Combine broth, salsa, cumin and beans in large pot. Bring to a boil. Simmer for 5 minutes. Add corn. Return to boil. Add remaining ingredients. Simmer for 10 minutes or until vegetables are tender. Makes approx. 8 1 cup servings
