Introduction

I put this in muffin tins to make 12 servings otherwise it can be made in a 9 inch round pan. It puffs up beautifully and the added butter gives it a wonderful shine. Ingredients

    1 cup all-purpose flour, sifted into a large bowl
    1 cup yellow fined grind cornmeal
    2/3 cup white sugar
    2 teaspoons salt
    2 teaspoons
    1 egg
    1 cup milk
    1/3 cup vegetable oil

Directions

Preheat oven to 400 degrees F (200 degrees C) Spray a 9 inch round cake pan or use cupcake holders in a 12 muffin pan/s.
In a large bowl, combine sifted flour, cornmeal, sugar, salt and baking powder.
Stir together the egg, milk and vegetable oil until combined and then add to the flour mixture. Whisk just until well combined.
Pour batter into prepared pan/s.
Bake in a preheated over for 20-25 minutes, or until a thumb print bounces back.
If planning to use the butter on the top - I open the oven at the 20 minutes and use a knife to spread the butter lightly over the top - it doesn't take much. Then finish it in the oven for the last 5 minutes.
