Introduction

Ingredients

    1 C. All Purpose Flour
    1/2 C. Whole Wheat Flour
    1/4 C. Quaker Oats
    1/2 C. Sugar
    1/4 C. Butter
    1 tsp. cinnamon
    1 1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1 Cup mashed bananas
    2 eggs, beaten
    1/2 C chopped pecans


Directions

In a bowl combine the first three ingredients. Measure out 3/4 cup of the dry mixture. Add the sugar. Cut in the butter.

Set aside 1/2 cup of this crumb mixture to be used for the topping.

To the remaining crumb mixture stir in the rest of the flour mixture, the baking powder, baking soda, and 1/2 tsp. cinnamon.

Beat together the mashed bananas and eggs in a separate bowl.

Combine the banana/egg mixture to the flour. Beat well.

Pour into a lightly greased 8x8x2 baking dish.

For the topping combine the pecans, 1/2 tsp. cinnamon with the reserved butter mixture until crumbly. Sprinkle on top of the cake.

Bake at 375 degrees for 35 minutes or until a toothpick inserted into the center comes out clean.
