Ingredients

    Foster Farms Turkey Breast Cutlets, 5 serving (remove)
    Progresso Bread Crumbs - Parmesan (1/4 C), 4 serving (remove)
    Contadina Diced Tomatoes w/ Italian Herbs (1/2 C), 3 serving (remove)
    *Kraft Mozzarella Finely shredded Part Skim cheese, 0.25 cup (remove)
    Egg Beaters, .5 cup (remove)
    I Can't Believe It's Not Butter, Light Spread (Soft), 1 Tbsp, 2 serving (remove)

Directions

Pre-heat oven to 400*

In a seperate bowl combine melted butter and bread crumbs until moistened.

Dip turkey cutlets into egg beaters and then into bread crumbs coating both sides.

Bake cutlets 8-10 minutes in oven.

Pull cutlets out: top with diced tomatoes and then cheese.

Put cutlets back in the oven for another 2-3 minutes to melt cheese.

    Very Good
    I like this recipe, but made a few substitutions ( 1 egg in place of egg beaters and real unsalted butter in place of the light spread). Also noted the the breading amount wasn't enough to cover 5 cutlets, so had to make more. All-in-all however, the recipe was a hit. - 2/15/08
