1/2 pound (8 oz) whole wheat penne
1 pound (16 oz) skinless boneless chicken
cut into 1 inch pieces
1/2 tsp. salt
1/4 tsp. black pepper
1 red onion diced
1 red pepper diced
1/2 tsp. curry power
1 (14 1/2 oz) can Italian style diced tomatoes
1 tble. olive oil
Directions
1. Cook the penne according to the package directions, omitting the salt if desired
2. Meanwhile to make the sauce, sprinkle the chicken with the salt and pepper. Heat a large nonstick skillet over high heat. with oilve oil. Add the chicken and cook, turning occasionally, until browned, about 4 minutes. Transfer to a plate..
3. Add the onion and red pepper to the skillet, reduce the heat, and cook, stirring occasionally, until lightly brown about 4 minutes. Add the curry powder and cook, stirring constantly until fragrant, about 1 minute. Stir in the chicken and tomatoes; bring to a boil reduce the heat; cover and simmer until the flavors are blended. and the chicken is cooked through about 20 minutes.
4. Combine the pasta and sauce in a large bowl and toss to coat.
