Ingredients

    2 cups (dry measure) brown rice, prepared
    4 eggs, separated
    3/4 cup grated parmesan, divided
    6 oz. mozzerella cheese, cut into 16 cubes
    1 Tbsp butter
    2 Tbsp flour
    1 cup skim milk
    Canola or olive oil cooking spray

Directions

Cook rice according to package directions. Remove from heat and add egg yolks and 1/2 cup of the parmesan and stir well. Cool. Preheat oven to 400. Scoop 1/4 cup of the rice mixture, form into a ball, poke a hole with a finger and insert cheese cube. Close the hole and roll the ball first in egg whites and then in bread crumbs. Place finished balls on a baking sheet and spray lightly with cooking spray. Bake at 400 degrees until browned on top- about 20 minutes. While rice balls are baking, melt butter in a pan. Add flour and mix, then gradually add milk to make a white sauce. Cook, stirring constantly, until the sauce thickens. Remove from heat and add remaining 1/4 cup of parmesan. Mix well. Makes 8 servings- 2 rice balls and about 3 Tbsp sauce.
