Introduction

Mild sweet and sour pork Mild sweet and sour pork
Number of Servings: 4

Ingredients

    1 tsp olive oil
    4 lean pork chops (about 3 oz each) trimmed

    For the Sauce:
    1/4 c. dry sherry
    2 Tbsp firmly packed brown sugar
    2 Tbsp reduced sodium soy sauce
    1/4 tsp. red pepper--more of less to taste
    2 tsp cornstarch
    2 Tbsp water

Directions

1. To prepare sauce, combine sherry, brown sugar, soy sauce and red pepper. Stir and set aside.

2. In a large skillet, heat oil over medium high heat. Add chops and cook until browned about 2 minutes a side.

3. Pour sauce over chops. Reduce heat to low. Cover and simmer until cooked through about 10 minutes. Add water, if needed, to keep sauce from cooking down too much.

4. Remove chops and keep warm. In a small bowl combine water and cornstarch. Add to sauce in skillet. Cook over medium heat until thickened--about 2 minutes. Pour sauce over chops and served.

This makes 4 servings--1 chop and 1/4 sauce for each person.

I suggest that you serve this over whole wheat, yolkless egg noodles and tender asparagus. Garnish with green or red pepper.

    I would reduce the soy sauce to 1 TBSP if I made it again, I added a TBSP of sugar free orange marmelade to the glaze. - 3/24/08
