Introduction

Ingredients

1 large yellow onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
10 Green olives w/pimentos, sliced
3 Tbl. Capers
3 bay leaves
6 black peppercorns, crushed
Salt to taste
(6) 6 oz. fish fillets
Directions
Makes 6 servings, 6 oz. fish each
Spray pan with non-stick spray. Add onion and garlic and saute until cooked but not brown.
Add tomatoes, olives, capers, bay leaves, and peppercorns. Salt to taste.
Bring to a boil and then reduce heat, simmering gently (uncovered) for about 10 mins.
Place fish in large skillet and pour tomato sauce over it. Bring to a boil and then cover and reduce heat. Cook on low for about 6 mins or until fish flakes with a fork.
Serve over a bed of brown rice and with steamed veggies on the side.
