Ingredients

* Sun Dried Tomatoes, 1 cup
* *Tia Rosa Burrito Size Flour Tortilla - 5 tortillas
* Egg substitute, liquid (Egg Beaters), 2 cup
* Onions, raw, 1 medium (2-1/2" dia) chopped
* Mushrooms, fresh, 1 cup, pieces or slices
* Spinach, fresh, 3.5 cup
* **Flax Seed Meal (ground flax), 8 tbsp
* Tabasco Sauce, 1 tsp
* Black Pepper to taste
Directions
Cook all vegetables and other odds and ends except tortillas, egg beaters and ground flax seeds until almost done. Add flax seeds and egg beaters to mixture, and cook until eggs are done.
Remove egg mixture from stove. Place a moderate amount onto one tortilla, rolling up the tortilla and folding the ends in, and cut the burrito in half. Consume or roll up and store for later consumption.
Makes 10 half burrito servings.

HUSKERSALAD
I think the fiber count is higher than the label shows. A tablespoon of flax meal is 4 grams fiber (3.3 per recipe serving) plus the spinach, tomatoes, and tortilla. So anyone who wants to make this will really get even better nutrition. Thanks for an alternative to spiking oatmeal w/flax. - 3/3/09
