Awesome, delicious, crowd pleasing, and not so low in fat or calories. Great paired with a huge pile of steamed veggies dressed with a squirt of lemon.

Ingredients

    1 pound ground lamb
    1 tsp. coriander
    1 tsp. cumin
    salt and pepper
    .5 cup minced onion
    4 tablespoons quince jelly
    4 oz. blue or Gorgonzola cheese
    .25 cup pine nuts, toasted
    2 cups mixed salad greens
    6 hamburger rolls

Directions

Mix ground lamb with onion, spices and salt and pepper. Shape into six patties. Slide onto very hot preheated non-stick (or well-seasoned cast iron) pan. Flip after two to three minutes, then lower heat and place lid on pan to cook insides of burgers. I like mine on the medium rare side so I usually just cook for another minute or two.

Meanwhile, toast buns then spread with quince jelly and cheese. Top with cooked burgers and a little handful of greens. Enjoy with a side of salad or huge pile of steamed veggies.
