Ingredients

    12 ounces fresh or frozen salmon fillets, 3/4 inch tick
    1/3 cup chopped fresh oregano
    1/3 cup chopped fresh cilantro
    1/4 cup sliced green onions (2)
    1 clove garlic
    1 tablespoon fresh lemon juice
    2 teaspoons olive oil
    1/4 teaspoon salt
    1/8 teaspoon black pepper
    Cherry tomatoes, halved (optional)
    Fresh oregano sprigs (optional)

Directions

1. Thaw salmon, if frozen. Rinse fish; pat dry. Cut into two 6-ounce pieces, if necessary; set aside.

2. In the bowl of a food processor or a mini-chopper combine oregano, cilantro, green onions, garlic, lemon juice, oil, salt and pepper. Cover and process until evenly chopped (or, use a knife to finely chop oregano, cilantro, green onion, and garlic). Transfer herb mixture to a shallow bowl. Stir in lemon juice, oil, salt, and pepper. Generously coat top of salmon with the herb mixture.

3. For a charcoal grill, grill fish, skin side down, on the rack of an uncovered grill directly over medium coals for 6 to 8 minutes or until fish flakes easily when tested with a fork (for a gas grill, preheat grill. Reduce heat to medium. Place fish on grill rack over heat. Cover and grill as above).

To serve, cut each salmon piece into 2 serving-size pieces.
