Introduction

This is an easy recipe that will satisfy a hungry family and still have leftovers! This is an easy recipe that will satisfy a hungry family and still have leftovers!
Number of Servings: 6

Ingredients

    2 lbs cubed beef
    2 tbsp olive oil
    1/2 c chopped onions
    3/4 can tomato paste
    1 tbsp cumin
    2 tbsp curry powder
    1/2 tbsp salt
    4 medium potatoes quartered

Directions

Fry onions in oil and when they are golden, add the beef. Once beef is browned, add the tomato paste. Fry a little longer and then add enough boiling water to cover everything. Then add the spices and salt. Let simmer for 1 hour and then add potatoes. Simmer another 30 minutes or until potatoes are done. Serve with Basmati rice.

    Bit high on the sodium. I tried it again with added cinamon stick. Liked it better that way after cutting back on sodium. I have to watch out for it. (High blood pressure) - 3/10/07
