Introduction
This is a very simple spinach recipe that even my greens-hating boyfriend will eat. The parmesan cheese can be reduced for a more low-fat option. I've had gruyere and parrano on this as well and it's amazing! I usually just season with salt & pepper but I've added garlic powder, green onion, and italian seasonings as well. Ingredients

Two 10-oz boxes frozen spinach, squeezed dry
1 large onion, chopped
1 clove garlic, minced (or more if you like garlic)
2 TBSP olive oil
4 egg whites, lightly beaten (or two eggs)
1 cup fresh grated parmesan cheese
salt & pepper
Directions
Heat olive oil and saute onion and garlic until onion is transparent. Add spinach and mix (note: spinach should almost be dry to the touch, so squeeze as much as you possibly can). Remove from heat. Stir together spinach mixture, beaten eggs and 1/2 of the parmesan cheese. Season with salt & pepper.
Bake in glass baking dish (about 8x8) at 375 for 10-15 minutes.
Note: the key is to squeeze squeeze squeeze the spinach unless you like soggy spinach. You should be able to put a handful in you hand, squeeze, and have it stick together well.
