Introduction

Ingredients

    1 Tbsp Extra Virgin Olive Oil
    2 tsp butter or margarine
    1 1/2 lbs large shrimp (40 - 45 pieces), peeled and deveined
    1/8 tsp salt
    1/8 tsp black pepper
    2 - 3 large garlic cloves, finely slivered or chopped (I use the minced garlic from the jar.)
    1/4 tsp crushed red pepperflakes
    1 Tbsp lemon juice
    1 Tbsp chopped parsley or basil (optional)

Directions

Heat the oil and butter (or margarine) in a large skillet over medium-high heat until the butter is melted. Add the shrimp, salt, and black pepper. Cook, stirring frequently, until just slightly translucent inside, 2 to 3 minutes.
Stir in the garlic and pepper flakes and cook, stirring frequently, until the shrimp are opaque throughout, 1 to 2 minutes more, lowering the heat if the garlic begins to color. Remove from the heat and stir in the lemon juice. Serve sprinkled with parsley or basil (if using).
Makes 4 servings.

    Very Good
    This was really good but not quite spicy enough for us. I added a teaspoon of chile powder and a teaspoon of flour and then at the end deglazed with some vegetable broth. It was great over pasta. Thanks - 3/13/10
