Ingredients

adzuki, 2/3 cup dry beans, or 2 cups cooked beans
2 cups water
Brown Sugar, 0.75 cup, packed
Semisweet chocolate, 70% cocoa solids, 100 grams
Egg, fresh, 2 large
Vanilla Extract, 1 tsp
Coffee crystals, 3 tbsp
Salt, 1/4 tsp
Directions
Cook the beans in the unsalted water until very mushy, about 40min.
Melt the chocolate in a double broiler or the microwave.
In a blender, blend the beans until smooth, add the rest of the ingredients and blend again to mix.
Pour out the batter into a 20cm square baking pan and bake at 180 degrees Celsius for about 15min.
Let cool for several hours before eating. This cake gets significantly better the next day. If you eat it while it's still hot it will taste bad, but if you wait, it will become the best brownie ever!
