I made this recipe up for my kids - it is a good way to get them eating healthy without knowing it! The Spiru-Tein adds vitamins, minerals & protein. Ingredients

1 egg (or egg replacer)
1 cup soymilk (or fat free milk)
1 tsp olive oil
1-1/3 cup Buckwheat pancake mix
1 scoop Spiru-Tein Cookies & Cream
semi-sweet chocolate chips (optional)
Directions
Mix all ingredients except the chips. Pour into heated skillet (use teflon to cut out need for oil) enough batter for 4 inch pancake. Sprinkle some chips on top & let cook until bubbles form & pop. Flip pancake, let cook until it stops rising & is golden brown.
