Introduction

Ingredients

    1 lb. Lean ground beef
    3 lg. cloves garlic, minced
    1 lg. onion, chopped
    1 green pepper, chopped
    2 lg. stalks celery, chopped
    1 12 oz. can niblets corn
    1 28 oz. can diced tomatoes
    1 19 oz. can red kidney beans
    1 c. instant rice (dry)
    1 c. water
    1 tsp. cumin
    1 tsp. chili powder
    salt & pepper to taste

Directions

Brown beef, drain and rinse. Put back in pan. Add all garlic, onion, celery and green pepper. Saute for 5 minutes. Add tomatoes, beans and corn. Simmer for 10 minutes. Add rice and water. Bring back to boil. Turn off burner. Cover and let sit for 10 minutes or until rice has absorbed most of the liquid. You could add more of the spices, but my husband can't handle them so I have to limit them. Makes 6 generous servings (1.5 cup).

    Iam going to try, and this sounds good. yes I would make this again, I would even try different meats and
