Introduction
"Fried Black Beans" This was a staple of my host family's diet when I studied in Guatemala. They cooked up the black beans in HUGE quantities and heated up a little bowl of them with every meal.This bean paste is usually served with small think corn tortillas. Ingredients

1Tbsp Oil (olive is listed here, feel free to substitute your own)
1 Onion (chopped) add onion to taste
2 cups Canned Black Beans (if using dry, make sure to soak them first)
Directions
Pour the oil into a deep pot, with at least enough room for 4 cups of liquid.
Chop up the onion into small pieces and cook it in the oil until it becomes soft and starts to turn transparent .
Add the beans and, if needed, 1/4-1/2 c of water.
Cook the beans until they are mushy, then squish them with a potato masher or hand mixer until they are a smooth consistancy.
Enjoy warm as a topping for rice, tacos, burritos, tortillas or plain.
I like to use this bean paste as a tasty substitute for mayo on sandwiches.
