Ingredients

    broccoli - 3 cups chopped
    chicken breast - 1
    raisins 1/4 cup
    sunflower seeds (or substitute with shaved almonds) - 0.3 cup
    light/fat free mayo - 6 tbsp
    cider vinegar - 1 tsp
    red apples - 2 small

Directions

mix mayo and cider vinegar in small bowl.
cook chicken with some chicken broth to keep it moist for the salad to avoid the chicken from soaking up all the dressing.
chop broccoli, add chicken, apples, raisins and sunflower seeds and mix dressing in. refridgerating salad at least an hour before eating cools it all and seems to cut the pungent cider smell down significantly.

    I liked this salad. I do have to confess though, I added cauliflower instead of the broc as I don't like broc. It reminds me of trees. - 3/19/07
