Introduction

This is a GREAT recipe from Better Homes & Gardens New Dieter's Cook Book, Meredith Books, 1st Ed. ,1992, page 291. We cooked it in the oven instead of the micro, & added 1/8 tsp. of ginger. Yummm! Ingredients

    2 medium chicken breast (I used 7.25 oz.)
    1 apple
    .25 c. shredded cheddar (1 oz.)
    .25 c. of aple juice
    1 tsp. cornstarch
    2 tbs sliced green onion
    1 tsp instant chicken bouillon granules

Directions

Rinse chicken , pat dry. Pound chicken to 1/4 in thick. Chop 1/2 of apple and slice other half. Divide chopped apple and cheese btween the two chicken pcs. Roll up & fold in sides to enclose filling, wusing toothpicks if needed.
Arrange rolls seam down in 8x8x2 baking dish. Add 2 tbs fruit juice to dish. Cover with vented wrap.
Cook on hi at 100% power in micro for 2 mins. Rearrange and sliced apple. Cook 2-4 minutes more. Put chicken on serving dish & cover to keep warm while making sauce.
SAUCE: in 1 c measure combine cornstarch, remaining fruit juice, onion & bouillon. stir in cooking liquid & mcro on hi uncovered 2-3 mins. Stir every 30 secs. Spoon over rolls.

    Very Good
    This was a nice change when we eat chicken so frequently! I used 2% cheddar cheese and half the oil (a little extra apple juice), and I baked the chicken in the oven. The chicken was juicy and the apple was tender - it was an excellent way to get a serving of fruit into my future husband! - 4/13/10
