Introduction

These muffins are easy to make and they are healthy and delicious! These muffins are easy to make and they are healthy and delicious!
Number of Servings: 24

Ingredients

    3/4 cup CoCo Wheats
    3/4 cup Milk, nonfat
    1/2 cup Canola Oil
    1 cup Brown Sugar
    1 cup Applesauce, unsweetened
    1 Egg
    1 cup Whole Wheat Flour
    1 cup all-purpose flour,
    2 tsp Baking Powder
    2 tsp Baking Soda
    1/2 tsp Salt
    1 tbsp Cocoa, dry powder, unsweetened
    2 tbsp Cinnamon
    0.5 cup chopped pecans

Directions

Preheat oven to 350. Mix together in small bowl CoCo Wheats and milk; set aside for later. In a large bowl mix together next 4 ingredients. Sift together the rest of the dry ingredients. Add Flour mixture and CoCo Wheats mixture to first mixture. Blend well. Stir in nuts and/or chocolate morsels. Pour into greased muffin tins. Bake for 18-20 minutes (or until toothpick inserted in center of muffin comes our clean. Let sit for 5-10 minutes and remove from pan. Cool completely. May be frozen for later use. Makes for 24 muffins.
