Introduction

The original recipe called for 1 cup of sugar and regular canned peaches. I substituted canned peaches in water pack and added 1/2 tsp of ginger to cut the sugar content.

Ingredients

    1/2 cup butter
    1/2 cup sugar
    3 medium eggs
    1/2 tsp ground ginger
    1 1/2 tsp ground cinnamon
    2 3/4 cups flour
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    2 cups canned peaches, water pack
    1 tsp vanilla
    1/2 tsp salt


Directions

Cream butter and sugar. Add eggs, one at a time and mix well. Mix dry ingredients in separate bowl. Mash peaches. Add to batter, alternating with dry ingredients. Mix well. Add vanilla and stir well. Grease loaf pan or use cooking spray. Divide batter into 2 small loaf pans. Bake at 350 degrees for 1 hour or until toothpick inserted into center comes out clean
