Ingredients

    2 C. rice (cooked and cooled)
    2 C. mixed frozen veggies
    2 tsp. EVOO
    3 eggs, scrambled

Directions

Heat EVOO in large frying pan. Add frozen veggies and saute for a couple min. Add rice and warm through. Scramble eggs in separate pan. Add scrambled eggs to rice mixture and stir. Makes 4 servings.

    This was my first attempt at fried rice and it turned out AMAZING! I added LOTS of extra veggies and shrimp (not a vegetarian) and it was enough to fill a family of 3 up. Thank you for the start! my husband is beginning to believe he WON'T starve as I lose weight!! - 10/8/08

  • Don't laugh, but what is EVOO? I'm sorry. Either I don't know or I've forgotten. Please either refresh my memory or just educate me on what it is. Hopefully I'll be able to laugh at myself when you do tell me what it is. - 4/12/07
