Introduction

Ingredients

2 lbs lean ground beef or turkey
2 c quick rolled oats
1 large onion, chopped
1/2c grated parmesan
1Tbs Worcestershire sauce
1Tbs ground black pepper
1Tbs Italian seasoning
1tsp rosemary
2 eggs, beaten
Stuffing: 1c on any- shredded carrots or zucchini or sliced mushrooms
1/2c trader joe's garlic marinara
Directions
Combine all ingredients in a large bowl, except for your stuffing choice and the 1/2c trader joe's garlic marinara.
Make 2 large long meat patties. Place one patty in meatloaf pan*. Push down center of patty to make a valley for your stuffing choice (1c on any- shredded carrots or zucchini or sliced mushrooms ) Place stuffing choice in valley, within 1/2 inch of edge. Top with the other long meat patty and pinch sides together.
Bake at 350 for 60-70 minutes. If desired, top with 1/2c trader joe's garlic marinara and bake an additional 5-10 minutes.
*you can also assemble this on a broiler pan/rack, so that the fat drippings fall away from the loaf. Be sure to pinch/smooth the sides so that stuffing doesnt fall out during cooking.
