Introduction
For a special treat, this is a fantastic breakfast. I like it with a sugarfree fruit compote on the side, or just some fresh fruit! Ingredients

4 slices wheat bread
2 TB fat free cream cheese or mascarpone
(what I had on hand)
.25 cup plain lowfat yogurt
1 egg
1 TB water
1.25 cup corn flakes
2 large strawberries
nutmeg
cinnamon
Directions
Makes 2 servings, 2 pieces each.
Preheat oven to 375.
1. Combine mascarpone or fat free cream cheese with yogurt. Stir to get lumps out. Add diced strawberries.
2. Put small spoonful of mixture in middle of each piece of whole wheat bread.
3. Fold bread over and press crusts together.
4. Refrigerate while doing the next step.
5. Crush up corn flakes into a small bowl with a dash of cinnamon and nutmeg. Beat egg with a little bit of water into another bowl.
6. Soak bread in egg mixture, then coat in corn flakes. Place in nonstick-sprayed glass pyrex.
7. Repeat 3 more times for other portions.
8. Bake for 20-25 minutes. Let cool slightly, serve.
