Number of Servings: 16

Ingredients

    1 cup flour
    1/2 cup cocoa powder
    1/2 tsp baking powder
    1 tsp baking soda
    3/4 cup packed light brown sugar
    3 egg whites
    1/2 cup prune puree ( combine 2/3 cup dried pitted prunes with 3 tbsp water and puree till smooth in blender or buy prune puree in the baby food section)
    2/3 cup 1% milk
    2 tsp vanilla

Directions

Preheat oven to 350 F.
Lightly spray 8" square baking pan with cooking spray.
Mix the first four dry ingredients together and set aside. Mix the brown sugar, egg whites, prune puree, milk and vanilla together.
Add dry ingredients to the liquids.
Stir well and don't over mix.
Pour batter into pan and bake for 40-45 minutes or until a tooth pick comes out clean.
Cool well and cut into 2" squares.
Makes 16 servings
