Introduction

add 2 cups shredded cooked chicken to make main meal

Number of Servings: 4

Ingredients

    3 cups shredded cabbage (1/2 bag)
    2 cups shredded broccoli (bagged 'slaw')
    1 cup shredded carrots
    1/2 cup minced fresh cilantro (optional)
    5 Tbl rice vinegar
    3 Tbl vegetable oil
    2 Tbl sugar
    2 Tbl fish sauce
    2-3 teas Asian chili sauce
    1/4 cup chopped unsalted roasted peanuts

Directions

1. Toss vegetables and cilantro together in large bowl.
2. In separate bowl, whisk vinegar, oil, sugar, fish sauce and chili sauce together.
3. Pour dressing over cabbage mixture and toss to coat. Let stand 10 minutes to allow flavors to mingle.
4. Sprinkle with peanuts before serving.
5. optional: add 2 cups shredded cooked chicken during step 1.
