Ingredients

1 2lb pork roast, cut into cubes
5 large carrots, cut into sticks
5 stalks celery, cut into large chunks
2 large onions, cut into eight pieces
8 small potatoes, quartered, skins on
1/4 flour
4 cups water, 2 cups water
4 ice cubes
1 bay leaf

Directions
Trim all visible fat from pork and set aside.
In a large iron skillet, put the trimmed fat to gently fry until crisp and brown. Remove crisp bits and discard. Reserve 2 Tbs drippings in pan.
Add pork cubes in 2-3 batches and cook until browned. Remove to large kettle
Pour 4 cups water into pan, and stir to remove all the brown from the pan. Add to pork in kettle. Add bay leaf and pepper to taste.
Add carrots and onion to kettle, and bring to a boil. When the stew is boiling, reduce heat and add celery. Bring to boil again, and then reduce heat to a simmer.
Simmer for 30-40 minutes or until meat is tender.
Add potatoes and simmer until potatoes are soft.
In a quart jar with a screw on lid, mix ice, 2 cups water and the flour...shake until well blended.
Bring stew back to a rolling boil and add flour-water mixture, and stir until thickened.
