Ingredients

    1lb chicken breast meat, diced into 1" cubes
    2 cans cream of mushroom soup
    2 cups nonfat milk
    1 cup reduced fat cheddar cheese
    2 cups chopped broccoli (you can use frozen but fresh is the best)
    2 cups Kraft Minute Rice (Brown if you can find it)
    salt and pepper

Directions

combine chicken, soup, rice,milk, broccoli and salt and pepper in large bowl with 1/2 cup of the cheese. stir to combine. Pour into 9x13 baking pan and top with remianing cheese. Bake at 375 for 40-50 minutes until chicken is done. Serves 8

    This looks really good - I'm going to have to give it a try. I think I will substitute long grain brown rice for the white rice though - those whole grains stick with me longer than the white carbs. - 3/26/07
