Number of Servings: 4


    12 Sea Scallops (or 16 - 20 Shrimp)
    2 Tablespoons Extra Virgen Olive Oil
    4 TBS grated fresh ginger
    7 minced garlic cloves
    Sea Salt to taste
    16 fl oz dry white wine
    4 Tbs sliced fresh basil
    1 cup Basmati Rice


In sauce pan heat oil until hot, but not smoking. Add garlic and 3 tbs of grated ginger. Cook over moderately high heat until the garlic turns golden, 2 to 3 minutes. Pour wine into pan and bring to a simmer. Cook until reduced to 8 fl. oz. About 8 minutes. Add the scallops in a single layer. Be careful not to overcook. Serve the scallops and their juices served over the cooked rice. Sprinkle with remaining ginger and basil.
