Ingredients

1/2 cp Spenda Granular
1 1/2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 cp unsweetened orange juice
1/4 cp fat-free sour cream
1/4 cp unsweetened applesauce
1/4 cp egg substitute
1/4 cp sliced almonds
1 cp dried sweetened cranberries
Directions
Preheat oven to 375 degrees. Spray a 12 cup muffin pan with butter-flavored cooking spray.
Mix Splenda, flour, baking powder, baking soda, and cinnamon together in a medium-sized mixing bowl.
Mix orange juice, sour cream, applesauce and egg substitute in a small mixing bowl. Add liquid mixture to dry mixture. Mix gently to combine. Add almonds and cranberries and stir until just blended.
Sppon batter into 12 muffin cups. Bake for 15-20 minutes or until toothpick inserted in the center comes out clean.
Makes 12 muffins.
