Ingredients

    1.5 cups flour
    .5 cup sugar
    1 tsp baking powder
    .5 tsp baking soda
    .5 tsp salt
    1 egg
    .5 cup butter, melted
    1.5 cup mashed ripe banana
    .75 cup peanut butter chips

Directions

1. In small bowl, mix flour, sugar, baking powder, baking soda, and salt.
2. In a large bowl, combing the egg, butter, and banana.
3. Stir dry ingredients into wet until just moistened.
4. Fold in chips.
5. Grease or line mini muffin tins.
6. Fill mini muffin cups three-fourths full.
7. Bake at 375 degrees F for 14 minutes.
8. Cool for 5 minutes before transferring to cooling rack.

Makes 20 servings of 3 mini muffins.
