    1 cup vegetables of your choice
    1 egg plus 1 egg white
    2 tbsp. water
    Sea salt and pepper to taste
    2 tbsp. cream cheese
    Assorted fresh herbs, optional
    1 slice whole grain bread
    1 tsp. butter (optional)


Spray pan with cooking spray. Add vegetables and sauté until softened, about 4 min. depending on vegetables. Meanwhile, whisk eggs, water, salt, and pepper together in a bowl. Return pan with vegetables to the stove top and pour egg mixture over vegetables. Cook until omelet is set, about 3 min. Add cream cheese and fold into omelet. Garnish with fresh herbs. Serve with bread and butter.

  • Was craving an omelet for some reason which is unusal for me since I don't like omelets. I used two whole eggs and 1.5 oz of cream cheese. Was very good, satisfying, and would make again. Thanks for a good "go to" recipe. - 10/7/10

  • Easy to make and very delicious! My omelette was almost overloaded with veggies so next time I will use maybe 3/4 cup. Also, to help cook the egg on top so the bottom won't burn broil for about 2 min. - 6/9/09
