Ingredients

    2 lbs extra lean ground beef
    1/2 onion, chopped
    1 jalapeno, chopped
    2 15oz cans refried beans
    2 pkgs low sodium taco seasoning
    1 cup water
    1 14oz can enchilada sauce, divided
    13 burrito size tortillas

Directions

Brown first 3 ingredients in a pan. Add beans. Stir to heat through. Add seasoning and water. Add half the can of enchilada sauce. Spoon meat 1/2 cup at a time into the center a tortilla and top with 2 T of cheese. Fold up and place in a 9 x 13 baking dish. Repeat until all tortillas are used. Use any remaining beef and bean mixture as "glue" to close burritos. Top with remaining enchilada sauce and any remaining cheese. Bake at 350 for about 20 minutes. If top gets too brown, cover loosely with aluminum foil. Makes about 13 burritos.
