I got a fennel bulb in a delivery of organic produce. So, I had to figure out what to do with it. Since I don't choose what goes into my delivery, I often get to try new things. Ingredients

    1 fennel bulb, thinly sliced
    2 large oranges, sectioned, seeds removed
    2 T craisins
    1 T olive oil
    1 T balsamic vinegar
    salt and pepper to taste

Directions

Mix together and serve. To make it look fancier, you can add a bit of the fronds from the fennel leaves.

Make 4 3/4-cup servings.

    Incredible!
    I added the orange zest from the oranges to the salad, and swapped red wine vinegar one time. This is a wonderfully fresh tasting salad year round. - 10/22/14
