Introduction

This is an old family favorite my mother made when I was a child. This is an old family favorite my mother made when I was a child.
Number of Servings: 12

Ingredients

    1 lb Ground Beef
    1.5 cup chopped onion
    3 10.75 can Tomato Soup
    4.5 cup water
    4.5 quick cooking rice
    3/8 teaspoon garlic powder
    3 teaspoon oregano
    1.5 teaspoon salt

Directions

Brown ground beef in a skillet, drain off fat.

While beef is cooking, in a large pot, combine all ingredients except hamburger and rice. Stir, then add the rice in, stir again and put on a burner, medium heat.

By this time the ground beef should be nearly finished. Add the beef into the pot as soon as it is done.

Cook the risotto until it boils, stirring occasionally. Once the risotto is boiling turn down heat to low, and let it boil until the water is mostly gone.

Turn off heat and let sit covered for 20-25. The dish can be eaten as soon the rice finishes cooking, but the longer the risotto sits, the better it will taste.

Season with Parmesan cheese to taste.

My husband made this and it was very good! Only thing I would do is add some more garlic. Doesn't seem like enough to me. Loved how easy this was! MMm I wonder if I could add some mushrooms next time. - 9/28/09
