Introduction

An easy dinner pie that is immensely popular in my family. Served on a summer day in the garden with a leafy salad it's just great!

Number of Servings: 4

Ingredients

    120g wholemeal flour
    100g white flour
    pinch of salt
    40g butter
    3 tbs water

    2 medium onions, chopped
    3 medium ripe tomatoes, sliced

    2 eggs
    200g cottage cheese, 1% fat
    Thyme, fresh or dried
    Salt and pepper
    1 ball of mozzarella cheese

Directions

Mix flours and salt.
Cut butter in smaller pieces and mix with the flour until absorbed - mix it well! Gather the crust dough with the water and line a (buttered or otherwise treated) round pie form. Pierce with a fork and bake at 200 degrees C for 15 mins.

Fry the chopped onion on a nonstick pan till tender.

In a separate bowl, mix the egg, cottage cheese, thyme, salt and pepper.

Slice the tomato.

Remove the crust from the oven and place the sliced tomato into the crust, add tender onions and then the egg mixture. Top with sliced mozzarella.

Bake in the oven for 30mins at 200 degrees C.

Serve with a green salad.
