Ingredients

    * *Baked Potato, with skin, 1 large (3" to 4-1/4" dia.
    * Peppers, green, red, yellow medly
    *1/2 cup Broccoli, frozen,
    * 1/4 cup 365 Everyday Blanched Shelled Edemame,
    * Salsa, .25 cup
    * *Daisy Light Sour Cream, 2 tbsp

Directions

Cook potato, I stuck mine in a steam bag and microwaved it for 7 min. While the potato cooks, stir fry or steam your veggies, season to taste.
Cut potato in half length way, top with stir fried veggies, top with salsa and sour cream.
